Health experts warn that even the most health-conscious individuals may be keeping potentially harmful items in their refrigerators. While the dangers of unsealed raw meat, fish, and canned goods are widely recognized, there are other unsuspected items that could lead to health complications. Food scientists recommend that ginger, garlic, onions, cucumbers, and colorful peppers be stored on the counter instead.


Refrigerating these foods can foster mold growth and change their textures from fresh and crisp to limp and rubbery. The molds that can develop on some refrigerated foods are particularly toxic. For example, onions and garlic that have been refrigerated can grow black mold, which may result in kidney damage, lung infections, fungal ear infections, and allergic reactions. Ginger, on the other hand, can develop fuzzy patches of Penicillium brevicompactum, which can cause respiratory issues if inhaled. Ingesting these spores can suppress the immune system, lead to gastrointestinal distress, and potentially result in liver toxicity.
